Mango Carrot Lemonade

I just made a huge batch of this juice and realized I’ve never shared this recipe with you! I can’t believe that seeing as this is one of my favorites.

This juice is very refreshing and tart. It’s somewhat of a juice/blend hybrid seeing as I use frozen mango instead of processing fresh mango through the juicer. I just find that mango is one of those rare fruits that works better this way. Plus, adding the carrot/lemon juice to the frozen fruit turns it into somewhat of a slushie-delight.

Now, you may need to adjust the recipe based on how sweet/tart you like it. I like my juices super tart, so consider this somewhat of a general guideline. But here’s what you’ll basically need:

Mango-Carrot Lemonade

4 pounds carrots
1 bag frozen mango
4 lemons
water (or even better, coconut water)

Process the carrots through your juicer and juice the lemons with a citrus juicer. Pour the carrot/lemon juice into a blender and blend in the frozen mango. Add in about 1/4 cup of water or coconut water just to take the “edge off”. Enjoy!
