Summer Prep Juice

Summer is 21 days away, can you believe it? I always like kicking off each season change with a little reboot. This week, I’m going to keep it simple and stick to just one juice recipe. But it’s one that makes a big difference for me. Thought I’d share the recipe for anyone else who’d like to give it a try! Here’s what you’ll need:

Summer Prep Juice

1   bunch beets (about 3 medium size)
1   5-lb bag carrots
3   medium size cucumbers
1   full stalk celery
1   2-lb bag lemons
1   large piece ginger
4   apples, your preference

Wash all your vegetables really well, taking time to scrub the root vegetables. Start by juicing all your lemons in a citrus juicer and set the juice aside. Then, I typically start by juicing the softer greens in my Breville Juicer on the low setting.

After juicing the greens (cucumbers and celery), I start with the root vegetables on high setting and the finally, the apples. Combine all the juice together (including the lemon juice) in one large pitcher and stir. Use a slotted spoon to remove the “foam” that tends to settle on top.

Bottle your juices leaving no air space at the top. This batch yielded 6 full 18oz bottles of juice for me. Refrigerate immediately. (BTW: I don’t keep fresh juice for longer than 3 days.)

Now, what will this reboot look like for me? It always looks different, but this time, I’ll be drinking two of these juices a day and keeping it super light on the rest of my meals. I already drink tons of water. I’ll be cutting back on some of the sweets. That’s it. My main focus this time? Don’t overthink it.

Hitting the reset button at the start of Winter, Spring, Summer, Fall – it really helps to “keep my axe sharp” throughout the year.
